Recipe: Curry Vinaigrette

Do you remember high school biology? If you stayed awake, likely you learned about the circulatory system: arteries take oxygen-rich blood from your heart to the body, and veins take the oxygen-depleted blood back to the heart. 

And maybe you also learned about microcirculation: this is the point in the system where the arteries get smaller and smaller until they become capillaries that are so small that just one cell can travel through at a time. This is where the life-enhancing magic happens: oxygen and other vital nutrients are delivered to the cells.

Many aspects of modern living can lead to compromised microcirculation: nutrient-poor foods, a sedentary lifestyle, chronic stress, and smoking. Diabetes and hypertension are two obvious health issues that are exacerbated or caused by poor microcirculation, but any joint or organ can be negatively affected if the oxygen and nutrients are not being delivered freely, leading to PCOS, weight gain, erectile dysfunction, restless legs, kidney dysfunction, joint pain - to name a few.

The good news is that you can improve your microcirculation by eating unprocessed food, moving your body frequently, not smoking - and by including these five delicious “superfoods” daily:

  1. Beets, and dark, leafy greens (including beet greens)
  2. Berries: 2-3 ounces of blueberries, strawberries, raspberries, and/or blackberries a day
  3. Garlic: ½ to 1 clove raw, crushed garlic a day 
  4. Green Tea: 1-3 cups a day
  5. Chocolate: yes, you read that right - but this needs to be dark chocolate 80% or more, 1-2 ounces a day. Or, better yet, raw cacao powder (unsweetened).

This is a flavorful dressing that is good on just about anything.

And it features your daily garlic for improved microcirculation. Drizzle it over steamed beets or steamed greens for a double microcirculation meal!

  • 1 clove garlic
  • 1/2 tsp unrefined sea salt
  • 2 tsp curry powder
  • 1/2 tsp fresh ginger, grated
  • 2 Tbsp lemon juice or red wine vinegar
  • 4 Tbsp olive oil

Pound garlic in a mortar with sea salt. 

Add curry powder and ginger, work into a paste. 

Stir in lemon juice/vinegar, then whisk in oil.
